In earlier days the city had many pubs, breweries and inns. In Maastricht we know the song: "Where the brewer is, the baker is not needed". This was certainly not always true, because often a bakery was also connected to a brewery. This building was already mentioned as an inn/cafe in 1485 and continued to serve as such without interruption. This makes "the rose hat" the oldest pub in town. This name refers to roses and not to the Rosary. In the Ancien Regime this part of today's Boschstraat was called Wood Market (Holtmerckt), sometimes also Cattle Market, and in the second half of the 18th century "The Old Cow Market".

In the newspaper 'Journal de la Province de Limbourg', this advertisement was placed on 15 November 1828, in which the building "in the rose hat" is mentioned in combination with a gentleman called L. Frederiks. The stable keeper Lambert Frederiks was the owner of the building at Boschstraat 107, but he probably did his business from number 109.
