There are more stars on Maastricht signs, but they are five-pointed, always representing the city's coat of arms. This is a six-pointed star and clearly not the city star. It belongs to the list of celestial bodies like the sun, moon, and stars, which were also frequently depicted on gable stones. There must have been a date in the past, because next to the star there is also an ANNO stone here in the facade of the building.
